Whats wrong with a castle here and there or everywhere as you seem to make it out to be.
They add character to island, it's rare for any inhabited country or island not to have remnants of an older time.
That and they add nice areas around which missions can be built if they are placed correctly

Nice screens. Only one thing is bothering me...since early OFP most of community mapmakers consider placing that castle on the map as their duty. Why?
